Visual Phase
Green colour with light yellow tones, unctuous, full-bodied and very bright in appearance.
Olfactory Phase
Freshness with a medium-high intensity of fruitiness with a predominance of green. The leaves are clearly noticeable in combination with notes of freshly cut grass, while fruity descriptors such as banana or fig appear, with aromas of tomato plant and mint standing out.
Gustatory Phase
Its silky texture makes it pleasant to the palate. The attributes detected on the nose are once again appreciated, including some more such as artichoke and green wheat, with a fresh, fruity and green flavour. The bitter and spicy notes are present with a good degree of firmness, that is, medium intensity and without overpowering the fruity olive notes, highlighting the mint and chlorophyll nuance that envelops the entire oral cavity and invades the retro-nasal pathway leaving a long aftertaste and conferring astringency at the end.
Sensory Aspects
An oil that is balanced in terms of fruitiness, aromas, spiciness and bitterness, while being complex due to the variety of nuances and harmonious due to the balance of these, which is why in the overall assessment it is an elegant oil.
