The Fincas de la Boella, of more than 250 hectares, are located in Tarragona, next to the Mediterranean. The climate, with mild winters and warm summers, is ideal for the development of the olive tree. Like the characteristics of the soil.
La Boella grows 3 olive varieties in the traditional way: Arbequina, Koroneiki and Arbosana.
The Arbequina variety is harvested between the end of October and the beginning of December.
Its intensive planting system allows for continuous mechanical harvesting of the olives. The olive is harvested at its optimal point of ripeness. The time between harvesting and grinding the fruit is reduced as much as possible to achieve the best quality of the fruit. The olive does not fall to the ground, but is picked directly from the tree.
In the La Boella mill, the oil is extracted using only physical methods (crushing, beating and separation). When the olives are clean of leaves and impurities, they proceed to grinding, obtaining a homogeneous paste. This paste is added to the blender, where it is kept at a temperature of between 25 °C and 27 °C, so that it maintains all its aromas. With the subsequent centrifuge, the flower oil is separated from the paste.
Balanced and complex profile, ripe fruity identifiable on the nose and mouth. With a wide variety of vegetal aromas in the background, especially apple and banana. Nuances of ripe fruits such as artichoke, almond, fennel and tomato.
It presents retronasal notes of banana peel, kiwi and green apple.
The mouthfeel is almond-like, highlighting its sweetness with final astringency, which does not interfere with its profile.
Very balanced and harmonious Arbequina extra virgin olive oil with a marked touch of sweetness characteristic of the variety.
