The new “Arbequina & Harissa” of intense red color is a unique and spicy oil, which stands out for its fluidity, balance and freshness. For the preparation of Arbequina & Harissa, in collaboration with the chef of the sea Ángel León, an own, original and surprising recipe for the Harissa sauce (composed of dried red pepper, cayenne, garlic, coriander and caraway) infused with oil has been created. Arbequino extra virgin olive.
It presents the toasted and pungent aromas of cayenne in the foreground, followed by the other spices, where each of them are perfectly identified in the aftertaste: garlic, coriander and caraway. To this is added a weighted and intensified combination with the fruity and green aromas of fresh Arbequina olive juice.
Red/orange and transparent oil. Organoleptic profile that corresponds perfectly on the nose and mouth, but with the surprising natural spiciness of cayenne in the latter. It also stands out for its fluidity and bitterness and spiciness in perfect harmony with the spiciness provided by this mixture of spices.
EVOO infused with harissa, filtered and subsequently packaged with nitrogen, carrying out the protocolized controls.
Cold extraction through a two-phase system where the best sanitary and quality conditions are guaranteed. Maximum 3 hours from harvesting to grinding. 20ºC. No addition of water.
